Hi. I'm currently running into an issue where Firefox moves the profile information but when I launched Firefox it mentions something about using a default profile with this version. None of the information seems to move. What is the best course of action with this?

Perhaps this is some glitch with default profile that comes with Firefox when installing it. I suggest that you delete "%AppData%\Mozilla" and "%LocalAppData%\Mozilla" folders then restore Mozilla stuff again
