So I have a computer that I'm transferring a domain profile to a non-domain profile and it's hung at "Taking VSS snapshot - c:\" - been sitting there overnight. I exited, rebooted and tried again and the same thing. Any ideas?

Have you tried turning off VSS feature?
You can do that just before running copy job.
I guess something on that machine is preventing VSS script from running in background.
